Alliin is a sulphur containing amino acid, which by its self is not biologically active but is converted into the active form of the action of an enzyme allinase that is present with the alliine in the garlic bulb and in the dried powder. When Bio-Garlic reaches the intestine the allinase acts on the alliine to produce another amino acid that is in turn converted in the intestine into a number of distinct sulphur containing compounds that are ones that confer the health benefits. Over a dozen of these active compounds have been isolated and they all work together to give maximum activity. Allicin is responsible for the distinctive odour of garlic, but it is not itself active, and can be toxic.
